The other day I saw that I had some broccoli in the fridge that I had to use before I had to throw it away, and since it was a bit cold I wanted a soup. I started looking at recipes and this was the winner. The truth is that it was a success, at home they liked it a lot, an easy and quick recipe to prepare.
INGREDIENTS
- 4 tbsp butter
- ½ onion cut brunoise
- 2-3 minced garlic cloves
- 2 cups vegetable or chicken broth
- Salt to taste
- 4 tablespoons of flour
- ½ tsp ground black pepper
- ¼ tsp paprika
- ¼ tsp nutmeg (optional)
- 3 cups of broccoli
- 1 medium carrot grated
- 1 ½ cup of cooking cream
- 2 cups grated cheddar (or other cheese)
- ½ cup sweet corn
DIRECTIONS
- In a pot add a little oil and butter and fry the onion.
- When the onion is almost ready (it has changed color to brown a little), add the garlic and fry it a little.
- Then the flour is added and it is toasted a little so that it does not taste raw and the broth is quickly added without stopping cooking and stirring.
- When all the lumps formed by the flour have dissolved, add the pepper, salt, paprika and nutmeg.
- Add the broccoli cut according to the size that we want to find in the soup and also add the carrot. Cover the pot with a lid and cook for about 15 minutes.
- Uncover, add the cooked corn, the grated cheese and the cream.
- Let it cook for about 5 more minutes and add more salt and pepper if desired.
- It is ready to eat, if you wish you can put a little croutons and bacon on top, but this is totally optional.
I did the bacon in the microwave and the croutons in the air fryer, if you want more details ask me.
