Beef curry is among my oldest daughter’s favorite dishes. She loves to eat it with rice. Normally we do it with brown rice to make it healthier, although it is better to eat it with white rice and even better to eat it with a rice called Pilau (basmati rice with spices) I even put caramelized onions on top and some raisins when I am cooking and thus has a sweet touch. I will show you the recipe a little later. The curry recipes in India are much hotter, and they always have chili peppers, but the fact that I don’t like it very spicy and my girls don’t either, at home it barely has chili.
You have to know that for the curry to be good, you have to use a quality veal, cut into large squares and as long as it has bone and meat, if we do it without the bone the flavor will be totally different. It’s like making chicken broth without the bones.
A tip to speed up the veal cooking process is: halfway through cooking, turn off the heat and allow the veal to cool. When it cools down a bit, turn the heat up again.

INGREDIENTS
- 1.5kg veal
- 1 onion
- 2 cloves of garlic
- 500ml water (or whatever we need)
- 1 tsp garam masala
- 6 cardamoms
- 10 black peppers
- 6 cloves
- 2 cinnamon sticks
- 3 bay leaves
- 1 and ½ tsp salt
- 1 tsp cumin powder
- 1 tsp ginger powder
- 1 tsp coriander powder
- ½ tsp turmeric powder
- ¼ tsp chili powder
DIRECTIONS
- In a frying pan, fry the onion cut into julienne strips and the garlic cut into small pieces in a little olive oil.
- Add the cardamom, black pepper, cloves, cinnamon and bay leaf and continue cooking for a little longer, to release the aromas.
- Now the powdered spices are added except the garam masala (salt, cumin, ginger, coriander, turmeric and chili). And cook one more minute.
- Finally, add the veal and seal it a bit and add the garam masala.
- Now add half a liter of water or until the veal is covered and lower the heat a little, cover it and let it cook.
- From time to time uncover, stir and continue cooking until the veal is tender, and the water is almost consumed.
